We just got back from a weekend away, visiting the grandparents. The fridge is empty, the dirty laundry basket is full, and everyone is overtired.
I’m not sure which day is which, but these are the meals I’m looking forward to this week:
- Gazpacho (vegan)
- Butternut Squash Tacos with Spicy Black Beans (vegan)
- Falafel recipe from Gina (didn’t get to this last week) (vegan and/or vegetarian)
- Green salad with avocado, grilled salmon, goat cheese,… (flexitarian)
- Homemade veggie pizza made with gluten-free crust (vegan)

Yours is way more exciting (and healthy) than mine. Hubby is attempting a fast, so I’m being a bit lazy and diving into the the freezer for some easy kiddie fare.

I made those tacos a few weeks back and they are awesome! We had lots of leftovers and I actually ate them 7 days in a row, which I never do with anything!
I love tacos, well really I love all mexican food. We’re having tacos tonight, with hard shells.
Great menu - I would happily eat at your house every night of the week! The tacos sound amazing but like a lot of work, what with the two pans of squash (we have a tiny antique oven that only holds one pan at a time), but after reading Megan’s comment I think it might be worth it anyways!

Yeah, those tacos are good. I had to half the amount of peppers in there — they were too spicy for my little family!
