I’m aiming for *easy* healthy meals this week. I have a few things going on, and I can’t spend too much time preparing dinners. However, *easy* does not have to mean *processed.*
Here lies my plan.
Monday: Crunchy chickpea tacos (vegan)
Tuesday: Veggie pizza with GF crust (vegan)
Wednesday: Lemon garlic pasta (vegan) I bought GF brown rice noodles for this…
Thursday: Falafel recipe sent to me from Gina (vegan)
Friday: out of town, visiting the in-laws

you are staying so consistent with the vegan diet - how is it going? do you feel any different? has it been easy?

Hmmm…”consistent”?…Yes and no. I have my favorite vegan recipes I still rely on, but greek yogurt and eggs and fish still seem to make their way into my diet. Honestly, I’m really interested in doing a 100% vegan, gluten-free, no-sugar diet/cleanse for an extended amount of time — maybe 3 weeks? I’d really like to see how different I feel. What do you think?

I haven’t read Quantum Wellness, but I read something about it. In fact, I’m trying to get my hands on her new book, Quantum Wellness Cleanse (or something like that.) I did get the 3-week suggestion from here.
Honestly, the one thing I don’t want to give up is….coffee. I think that would be the most difficult thing, hands down.
I have never tried rice noodles. Do they differ a lot from wheat noodles?
I love falafel. I’ve never made it, but when I was in the middle east, I ordered it often. I love it.
