In April, I posted about 5 vegan recipes an omnivore will love. It was a big hit among readers and it sparked a lot of interest. I could be wrong, but I think a lot of people are curious about incorporating vegan and/or vegetarian meals but they’re nervous about them tasting like *yuck*. Lucky for all of you, I’m here to try them out and report on the best tasting recipes.
Without further ado, here are 5 more vegan recipes that your whole family will enjoy…
Butternut Squash Tacos with Spicy Black Beans

These were delish! My husband couldn’t get enough of these and said that the beans alone were worth making. The recipe can be found here, at DigginFood. One warning though: They are spicy!! I’d recommend starting with half the amount of chilis, and working your way up.
Portobello Quesadillas with Scallions

The original recipe is from Martha Stewart Everyday Foods, but I vegan-ized it, and it totally works. In fact, my husband has to ask if I used “real cheese” or “the vegan stuff.” My son -the mushroom hater- loves these. I have him convinced that these are special mushrooms. Pepita Salad

My {lack of} photography skills do not do this recipe justice. A more beautiful picture, as well as the recipe, can be found here. The funny thing about this recipe is that I usually do not like cilantro, and cilantro is a key ingredient in this recipe. In fact, the cilantro pesto is to die for…I can imagine it on all sorts of things! This recipe makes A LOT…I would recommend halving the recipe.
Lemon Garlic Pasta

We just had this recipe this week, and oh yummy! The entire family was left wanting more. I used regular “white” pasta that I found in the pantry, but next time I’ll use udon noodles. You can find the recipe here, at my all time favorite vegan blog.
Ultimate Veggie Burger

Technically, this recipe is vegetarian because it uses eggs; however, if you substitute the eggs out, it’s vegan. (If you don’t know of a good egg substitute, let me know and I’ll tell you what works for me.) This meal was heavenly. Not one complaint from the kids, and I don’t remember having to remind them to “take bites.” We topped our burgers with avocado and sprouts, but next time I’ll also add cipollini onions as a topping. The lemon garlic pasta looks like the simply delicious “spaghetti aglio, olio e peperoncino” I often prepare.
Yumm! These all sound great. The veggie burger sounds a lot like our falafel recipe-it’s awesome. I’d say for our kids, presentation is everything, the garish and extra stuff really make them excited to eat!
These are some of my faves, too. Just made pepita salad today and veggie burgers earlier in the week. I haven’t tried with the burgers, but you can sub ground flax seeds + water for eggs.
I keep meaning to try the mushroom quesadilla: what is the brand of cheese to use again? I freeze-up and forget every time I’m standing in front of the veggie-cheese at the store!
They all look wonderful! The pasta especially! I am not a vegetarian but I don’t care for meat so love these recipes!

I’ve tried a vegan falafel recipe before that turned out to be very blah. If you have a great vegan or vegetarian falafel recipe, I’d love to try it!

The ground flaxseed + water is the *egg substitute* that I usually use. The vegan cheese I use is called “Veggie Shreds” — it has mostly-green packaging. I honestly can’t tell the difference. (Too bad they don’t make a vegan goat cheese!)

Technically I’m a flexitarian. We’ve started to eat a lot less meat and animal products in our household — for health and environmental reasons. However, we don’t turn our nose up at recipes with meats and such. {The best of both worlds!}

I love me some pastured meat and eggs and feel better when eating them, but I also like a meat free meal here and there as well. I *love* those veggie burgers. I have been sprouting my garbanzos to make them and any other bean dish and find it so much more digestible.
