Last week’s menu was a total bust. After Tuesday, our meals turned into whatever was convenient – which usually means eggs & toast or quesadillas. Well, today begins another week — a new chance to eat healthy.
Monday: lemon garlic pasta I have a feeling the family is going to love this…
Tuesday: salad — greens, wild salmon, avocado, goat cheese…
Wednesday: gazpacho I’ve been hearing so many good things about this…
Thursday: mexican style salmon cakes with garlic-herb creme fraiche
Friday: ??? leftovers?
